Fat Zhu Noodle Lab Menu & What to Order The menu is deliberately concise, pairing springy, thin egg noodles or rice noodles with either plump, hand-wrapped black tiger shrimp and pork wontons or melt-in-your-mouth slow-braised beef brisket and tendon. Bowls arrive submerged in your choice of a clear 10-hour master broth or a deeply fragrant, fiery soup inspired by Hong Kong typhoon shelter aromatics. While the shrimp- and beef-focused lineup leaves virtually no room for vegetarian or halal diners, wonton purists will find some of the snappiest, best-seasoned wontons north of Highway 401.
