Boru is a specialized dining destination in the Financial District that brings the viral Japanese hambāgu experience to Toronto. Moving away from traditional table service, the restaurant features a minimalist, tech-forward design centered around a circular counter where diners sit at an open chef’s table. The concept is entirely focused on the craft of the hambāgu—a juicy, Japanese-style beef patty made from a blend of brisket, eye round, and chuck, mixed with onion and panko. Cooks prepare these patties over an open charcoal flame directly in front of guests, ensuring each serving arrives at peak temperature.
For a flat price, guests receive a set menu consisting of three hand-crafted patties, miso soup, and unlimited rice. The experience follows a specific, instructive progression: the first patty is served plain to highlight the charcoal char and natural beef flavour, the second is paired with grated daikon and ponzu for a bright palate reset, and the final patty is designed to be enjoyed with a raw egg yolk over a bowl of rice. Guests order via digital kiosks upon arrival. The restaurant currently operates on a walk-in-only basis, and because seating is limited, arriving early is recommended to secure a spot at the counter.
