Chef Cory Vitiello's first new solo restaurant in over a decade lands on the ground floor of the historic Dineen Building, playing the casual, all-day counterpart to his upstairs restaurant The Chase.
Chestnut leather banquettes and brass fixtures give the room the feel of a restored heritage tavern rather than a new build, which tracks — the Dineen has been standing on Yonge and Temperance since the 1890s. The menu leans into reimagined comfort classics: house-made bread program, a buttermilk fried-chicken sandwich, and a burger that's already drawing its own following.
The pedigree
Vitiello made his name at The Harbord Room and Flock before this, and The Frederick reads as a chef returning to the kind of unpretentious, technique-forward comfort food that built his reputation in the first place — just with a bigger, brassier room to do it in.
The role in the building
As The Chase's ground-floor sibling, The Frederick gives the Dineen Building an entry point that doesn't require a reservation or a special occasion — walk-in friendly, all-day hours, and a bar built for a quick bite as much as a full meal.
