Rosalinda was a prominent vegan Mexican restaurant located in the heart of Toronto’s Financial District. Founded in 2018 by a team of notable local restaurateurs, including Max Rimaldi and Grant van Gameren, the concept aimed to bring vibrant, plant-based dining to a neighbourhood dominated by corporate glass and steel. The space was celebrated for its stunning, greenhouse-inspired interior, which featured a high, airy roof, abundant greenery, and eclectic decor, creating a sophisticated yet warm atmosphere that appealed to both vegans and omnivores.

For those who visited, the menu focused on elevated, vegetable-forward dishes inspired by the flavours of Mexico and Baja California, rather than relying on meat substitutes. Popular items included creative tacos, tostadas, and shared plates like roasted cauliflower and mushroom-based dishes, often paired with a thoughtful selection of craft cocktails, mezcal, and low-ABV drinks. The restaurant was a popular spot for business lunches and social gatherings, offering a unique, plant-focused experience in a bustling part of the city.
