Quan Ngon Menu & What to Order The kitchen zeroes in on the tart, briny, and herbal profiles native to Hanoi and Hai Phong. Start with the Nem Cua Be, shatteringly crisp square crab spring rolls packed with pork and wood ear mushrooms, before turning to the Bánh Đa Cua, a deep crab noodle soup laced with leafy greens and chewy red rice noodles.
