Chef Takeshi Sato, formerly the chef for the Japanese Consulate General in Toronto, runs the kitchen with a strict adherence to the kappo philosophy of cutting and cooking. The space is intentionally sparse and intimate, built around a counter where you watch the staff manage copper Hagama pots and perfect their dashi. It’s a technical, high-precision operation that feels more like a quiet masterclass than a typical night out in the city.
You’re here for a structured omakase menu that moves through raw, grilled, and simmered courses using ingredients flown in from Japan. Because the seating is limited, you’ll need to book well ahead.
