Kaitlyn Lasagna

Buon Riso is a Roman-style supplì pop-up concept led by Toronto chef Kaitlyn Lasagna. A former founding member of the popular Tutto Panino, Lasagna has launched this venture to showcase her passion for Italian comfort food, specifically the Roman street food staple: fried rice balls filled with sauce and mozzarella. The project is a deeply personal, family-oriented endeavor, with Lasagna’s sister and mother contributing to the operations, branding, and kitchen work. Operating out of the Pasta Forever takeout shop on Dundas West, the concept aims to bridge traditional Italian techniques with seasonal Ontario produce, creating a nostalgic yet innovative menu that reflects Lasagna's culinary background and family history.

For a first visit, expect a rotating menu that highlights classic flavours alongside experimental, Toronto-inspired creations. The pop-up typically operates on a pre-order basis, with limited quantities available for walk-ins, so checking their social media for drop announcements is recommended. While the menu changes weekly, signature items often include the "Sunday Sauce" supplì, inspired by her nonna’s slow-simmered braised pork tomato sauce. The vibe is casual and community-focused, designed to bring people together over simple, high-quality food. As the project continues to develop throughout the summer, Lasagna hopes to collaborate with other local chefs, potentially introducing unique variations like jerk chicken or fried lasagna supplì.
