Venga Cucina Menu & What to Order The menu revolves around certified Roman pinsa—crafted from a blend of wheat, soy, and rice flour fermented for 96 hours to produce a shatteringly crisp exterior and airy interior. Order the Gino Picante pinsa topped with fiery Calabrian ’nduja, cured hot sausage, and pepperonata, or the Mortadella version draped with pistachios and fresh stracciatella. Fresh house pastas also excel, particularly the slow-braised wild boar pappardelle and authentic rigatoni carbonara tossed with house-cured guanciale and pecorino.
