The serene, minimalist dining room centres on a fragrant 200-year-old hinoki cypress counter seating 12, alongside six seats at adjoining dining tables. Every dinner unfolds with measured precision as Lin prepares wild-caught seasonal seafood flown in directly from Tokyo's Toyosu Market.
