Seven Mystery Menu & What to Order The tasting bar offers an extraordinary sensory experience centered on precision single-origin pour-overs and uncompromised espresso extractions. The menu rotates regularly based on seasonal harvests, focusing on elite varietals including competition-grade Panamanian Geisha, anaerobic naturally fermented Ethiopians, and high-altitude micro-lots from Colombia and Bolivia. Baristas extract pour-overs using specialized apparatus like the Hario Switch, allowing total control over immersion and percolation times to highlight nuanced floral, bergamot, and tropical fruit notes. Espresso drinks, such as the concentrated Single-Origin Ristretto or the creamy Flat White, are pulled on customized espresso gear calibrated down to the tenth of a gram.
