Rui's BBQ Menu & What to Order The undisputed crown jewel of Rui's BBQ is the traditional Leitão à Bairrada—whole suckling pig seasoned with garlic, black pepper, and lard, then slow-roasted in specialized wood ovens until the skin turns paper-thin and blistered to an incredible crunch while the meat stays exceptionally tender and juicy.
