What is Pauls Coffee? Pauls Coffee is an independent specialty coffee bar located on the ground level of the Palace Pier condominium towers at 88 Palace Pier Court, right beside the waterfront trail in Humber Bay Shores. Originally launched in 2019 as a mobile coffee truck operating out of a vintage 1966 Ford Kurbside, the business opened its brick-and-mortar cafe in 2023. It provides cyclists, dog walkers, and lakeside residents with expertly pulled espresso and warm pastries.

Pauls Coffee Menu & What to Order The cafe partners with local micro-roaster Ethica Coffee Roasters to pull clean, expressive espresso shots and balanced pour-overs. Beyond standard flat whites and Americanos, signature drinks include an aromatic, sand-brewed style Turkish coffee and an iced Spanish latte sweetened with condensed milk. The pastry display features all-butter croissants, spiced cardamom buns, and thick sea salt dark chocolate chip cookies baked fresh daily.

Know Before You Go Pauls Coffee operates daily from 8:30 AM until 5:00 PM. The storefront is primarily geared toward grab-and-go service, making it an ideal pitstop during a stroll or bike ride along the Martin Goodman Trail and Humber Bay waterfront park. Paid visitor parking is available near the condo complex, and bike racks are conveniently situated close to the entrance.
