What is Pasta Privato? Located at 11 Church Street inside the heritage brick-and-timber setting of Notte Ristorante, Pasta Privato is chef Michael Angeloni’s intimate 24-seat pasta speakeasy. Concealed behind a plush red curtain, the dimly lit dining room features deep blue walls lined with framed vintage cookbooks and family keepsakes. Angeloni—backed by veteran hospitality partners Yannick Bigourdan and Adam Teolis—channels techniques honed at kitchens like Splendido and The Black Hoof into an exacting space dedicated to hand-rolled pasta craft.

Pasta Privato Menu & What to Order The kitchen operates around an eight-course seasonal tasting menu alongside a four-course prix fixe format. Must-order signatures include the savoury chicken liver bigné with aged white balsamic, coal-grilled beef heart skewers over heirloom beet relish, and hand-braided Sardinian lorighittas tossed with Salt Spring Island shellfish and 'nduja. For deeper indulgence, order the tagliatelle with beef shank Genovese ragù or the charcoal-grilled Nova Scotia lobster risotto, backed by a tightly curated sommelier wine program; note that the gluten-heavy kitchen cannot accommodate gluten-free dietary requests.
