La Bartola was a celebrated, fully plant-based Mexican restaurant located in Toronto’s Little Italy neighbourhood. Founded and led by chef Ivan Castro, who drew inspiration from his upbringing in Mexico City and the culinary traditions of his mother and grandmother, the restaurant was widely recognized for its innovative, meat-free approach to authentic Mexican gastronomy. It gained significant acclaim as the first fully plant-based restaurant in Canada to receive a Michelin Bib Gourmand designation, an honour it maintained for three consecutive years for its commitment to high-quality, sustainable, and flavourful cooking.
The restaurant was known for its house-made tortillas, intricate mole preparations, and creative use of ingredients like hibiscus flowers, jackfruit, and banana blossoms to replicate traditional textures and flavours. The space featured a vibrant, colourful interior and a popular back patio designed to evoke the atmosphere of Oaxacan outdoor dining. While the restaurant officially ceased operations on March 15, 2025, it remains a notable chapter in Toronto’s dining scene, remembered for its dedication to low-waste practices and its ability to showcase the versatility of plant-based ingredients through dishes like its signature Mole Blanco and Sikil P'aak.
