What is Gyopo Brewery? Occupying a former laundromat at 1456 Dundas Street West in Little Portugal, Gyopo Brewery is Toronto’s first dedicated craft makgeolli brewery and anju snack bar. Masterminded by brothers Hansang and Juwon Lee (the team behind Gonzo Izakaya and Kensei Bar) alongside partner Hyunchan Jo and master brewer Dohyon Kim, the room channels the raw, communal energy of Seoul street-side pochas. The interior is stripped-back with hand-tagged graffiti walls, vintage Korean ephemera, and a fiery open kitchen backed by makgeolli taps piped directly from the basement cellar.

Gyopo Brewery Menu & What to Order Every dish is engineered around Korea’s three foundational fermented jangs—ganjang, doenjang, and gochujang—designed specifically for communal snacking and drinking. Start with a pour of the crisp draft makgeolli or the aromatic Perilla brew alongside wood-charred cabbage wedges seasoned with house nuruk salt and makgeolli ssamjang. For meats, do not miss the smoky charcoal-grilled LA galbi short ribs or the caramelized doenjang-and-honey roasted bone marrow paired with crispy mini seaweed rice cakes.
