Order the signature Ibérico pork or house-made preserved duck leg clay pot rice to get the prized layer of crispy, scorched rice at the bottom of the pot. High-end splurges like the whole grilled Japanese Kinki fish, binchotan-seared Miyazaki A5 wagyu skewers, and miso black cod are exceptional, easily paired with Hitachino Nest craft beer or artisanal junmai ginjo sake.
