Dolly’s is a massive country-western bar located on The Esplanade, developed by brothers Graham and Dan Hnatiw, the team behind the nearby Old Spaghetti Factory. Moving into the former Bier Markt space, the venue is designed to fill a gap in Toronto’s nightlife scene by offering a contemporary, entertainment-driven take on the country genre. Rather than relying on traditional honky-tonk clichés like whiskey barrels or horseshoes, the space features a modern aesthetic with unique touches, such as a carousel horse salvaged from the Old Spaghetti Factory displayed near the entrance. It is built to accommodate approximately 700 guests indoors, with capacity expanding to 1,000 when the patio is in operation.

Visitors can expect a lively atmosphere focused on country music, live performances, and DJ sets. The venue prioritizes an active nightlife experience, featuring line dancing on Wednesday, Friday, and Saturday nights, with dedicated instruction provided to help guests find their footing. The food and beverage program centers on comfort, with a strong emphasis on pizza—developed with the help of a sixth-generation Italian baker—and late-night slices. The cocktail menu, led by Gordon Hannah, focuses on speed and efficiency, offering a selection of batched drinks alongside non-alcoholic options and zero-proof beer.
