Bisteccheria Sammarco Menu & What to Order The kitchen sidesteps standard steakhouse conventions in favour of disciplined Italian sourcing, spotlighting Ontario Prime cuts from Cumbrae’s that are dry-aged in-house up to 60 days—the colossal Bistecca alla Fiorentina, simply charbroiled with olive oil and sea salt, is the centerpiece. Before the meat arrives, order the fried Castelvetrano olives stuffed with sausage and pecorino, the bluefin tuna crudo over foie gras mousse, and the decadent 100-egg-yolk fettuccine finished tableside with St. Brigid's butter and 24-month Parmigiano-Reggiano.
