Every classic cocktail holds a reason for its longevity, but modern mixology thrives on taking those time-tested formulas and giving them an inventive spin. In this hands-on evening workshop at The Depanneur's Spadina loft kitchen, cocktail educator Tammy Coxen guides participants through the history, mechanics, and evolution of four pillars of bartending: the Bee's Knees, Manhattan, Negroni, and Mojito.
Rather than just memorizing recipes, you will examine the structural balance of each drink. Explore how Prohibition-era gin masks gave way to spicy modern tequila sours, how 19th-century New York whiskey builds evolved through the craft renaissance, and how adding smoke and chocolate shifts a bitter Italian Negroni in unexpected directions.
What You Will Learn
Coxen, founder of Tammy's Tastings and host of the *My Tiny Bottles* series, weaves social history with practical bar craft. Participants will practice fundamental techniques including:
- Proper stirring for spirit-forward cocktails
- Aeration and chilling through correct shaking
- Gentle muddling for fresh herb extraction
- Building balanced ratios to adapt spirits at home
Practical Details
The two-and-a-half-hour workshop includes hands-on drink preparation, light snacks, and tastings equal to approximately two full cocktails across the session. The Depanneur is located at 192 Spadina Avenue, just south of Chinatown and steps from Queen Street West, easily reached via the 501 Queen or 510 Spadina streetcars. Space is intentionally kept small around the communal work tables, so early booking is recommended.
