In this hands-on class at the Centre for Social Innovation, Italian cook Erica Foffi will guide you through the traditional techniques that make this Sicilian dessert a masterpiece.
What You'll Learn
Erica will take you through the entire process, starting with the dough. You'll learn how to roll, shape, and fry the shells until they are golden, blistered, and perfectly crisp. But the shell is only half the battle—you'll also learn to prepare a smooth, well-balanced ricotta crema and master the art of final assembly, decorating your creations with classic toppings like pistachios, chocolate, and candied citrus.

Born and raised in Rome, Erica Foffi brings a deep appreciation for simple, seasonal, and shared Italian cooking to her classes. Her approach is welcoming and focused on the joy of creating something beautiful from scratch.
